The Technique Behind Traditional Ukadiche Modak

A practical look at the rice flour dough, coconut-jaggery filling, pleating, and steaming techniques behind soft traditional Ukadiche Modak.

A good Ukadiche Modak depends on three things: the rice flour dough, the coconut-jaggery filling and the steaming process.

For the dough, fine rice flour is combined with boiling water in a 1:1 ratio. Salt and ghee are added before the flour. After a short covered cooking stage, the mixture is kneaded while warm until it becomes smooth and pliable.

The filling uses freshly grated coconut, jaggery and cardamom. It needs to be cooked slowly until it thickens and begins to leave the sides of the pan. This helps prevent excess moisture from affecting the final shape.

The shaping technique is simple but requires practice. A warm dough portion is flattened into a disc, filled and folded upward through several small pleats. The top is then sealed before steaming.

Steaming usually takes around 10–12 minutes. The finished modaks should look slightly translucent and glossy.
